For Una Notte in Italia, Salt & Seek is teaming up with Antica Sicilia and Chef Giuseppe Mirenda for a single evening that runs the length of Italy.

A fixed, eight-course menu built for June 28th and then retired forever. It begins and ends where Giuseppe began: Sicily.

One Evening, Never Repeated.

This isn't dinner off a menu. It's a single choreographed journey from the Mediterranean shores of Sicily to the heart of Tuscany.

Eight courses cooked over live fire, in one intimate room at one of only four DiRoNA-honored restaurants in Utah.

You begin by the sea in Sicily and end with a whole Bistecca alla Fiorentina carved tableside to share. Caviar. Black truffle. 36-month Parmigiano. The kind of night you build an evening around, and then never get to have again.

Dalla Sicilia a Firenze. A journey from the Mediterranean shores of Sicily to the heart of Tuscany.

Course I

Tonno Crudo

Fire-Roasted Eggplant Purée • Caviar

Sicily

We open at first light in Palermo, the bluefin still glistening from the morning catch. Garnet-red and barely kissed by the knife, laid over fire-smoked eggplant with a glint of caviar like spray off the sea.

Course II

Polpo alla Siciliana

Grilled Octopus • Bell Pepper Caponata

Sicily

Still on the Sicilian coast, where octopus is charred over flame until the edges blacken and turn sweet, resting on a caponata simmered the slow sweet-and-sour way the island's grandmothers have for generations.

Course III

Vitello Tonnato

Slow-Cooked Veal • Tuna Emulsion • Capers

Piedmont

North now, into the misted hills of Piedmont, where a beloved summer dish proves the sea travels even here: cool veal under a silk of tuna, caper, and lemon.

Course IV

Carciofo alla Romana

Charred Artichoke • Anchovy Vinaigrette • Mint

Rome

Down into Rome at the height of artichoke season, the way the old trattorias have always done it, braised tender in oil and mint, then finished dark over open flame.

Sorbetto al Limone Siciliano

Sorbetto al Limone Siciliano

Sicily

A cold, bright breath of Sicilian lemon, picked from groves on the island's sun-warmed slopes, to clear the palate before the climb ahead.

Course VI

Bucatini al Parmigiano e Tartufo

36-Month Parmigiano Reggiano • Fresh Black Truffle

Umbria

Up into the hill country, where hunters work the damp oak woods at dawn for black truffle, shaved warm over bucatini bound in Parmigiano aged a full three years.

Bistecca alla Fiorentina

Presented Tableside for Sharing

Florence

And then Florence, and the fire we have traveled all this way toward. A great Tuscan steak seared over live coals and carved at the table to be shared, as it has been for centuries in the hills above the Arno.

Gelato al Pistacchio

Italian Meringue • Candied Citrus

Home again, to Sicily.

Sicilian pistachio gelato served with Italian meringue and candied citrus. A light and elegant ending to our journey.

Why Did We Choose Antica Sicilia For Our First Chefs Table Experience?

Antica Sicilia is a multi-year Best of State and Best of Utah winner, and one of only four restaurants in the entire state recognized by the Distinguished Restaurants of North America.

Awarded Best of State again in 2026, Chef Giuseppe Mirenda, whose kitchen earned that recognition, is plating a menu that exists only on June 28th.

Just drinks. Beverages — alcoholic and non-alcoholic alike — aren't included in your ticket. Gratuity is already built into the price, though a little extra is always appreciated (and never expected).
